Hola, world. I am Jackie…the atypical American chick who loves Amsterdam so much that she moved from all family and friends to follow a road less traveled. Most notably, I’m a Hungry Lifetarian, meaning that I am a self-proclaimed risk-taker with the inclination to try anything once, and twice if I like it.
This blog was born in 2013. At the time, I was doing my academic postdoc at the Netherlands Cancer Center, conducting awesome experiments, which I hoped would lead to new treatment options for cancer patients. Not that I was bored, but I realized that unlike some of my colleagues who are content immersing themselves in science 24/7/365…my mind was wandering. I scoured science blogs, food blogs, fashion blogs, and travel blogs in my down time (with the occasional face-booking or Instagram of course).
In other words, I had (and still have) a helicopter view of the world…and I wanted to know about things.
Flash forward a few years, I still enjoy sharing my experiences with the world, whether it be through foods, photos, or obviously writing.
Most newbie blogger advice articles suggest that I “find a topic and stick to it,” but I’ve never been one to follow the rules.
This is my attempt to fuse (fresh, organic, vegan) food, science, and expat lifestyle into one (FUN) blog.
