How was your Valentine’s day? I hope it was incredible. I know mine was.
Rather than cycle through bitter cold and snow to a crowded restaurant, hubby and I stayed in, made seitan and veggie pasta, watched The Big Bang Theory, and then made the easiest, most deliciously sexy dessert.
Dark. DARK. chocolate.
I got the recipe from my girlfriend, The Vegadutchie, who is an amazing vegan chef and food blogger. I could tell by the grin on her face when she was describing this recipe to me that shall we make it, we would both be in for a total foodgasm. Also, this recent post from The Food Babe was both enlightening and totally depressing, detailing the reality of the yucks added to “gourmet chocolates” which you can buy in stores.
Seriously Godiva, since when are artificial flavors, Red 40, or hydrogenated oils worth $15/box? Gross.
4 ingredient vegan chocolate
1/2 cup coconut oil
1/2 cup maple syrup
3/4 cup cacao powder (not cocoa mix…this has sugar added)
touch of salt.
almonds, coconut, or other chocolate add-ins optional
Put the coconut oil in a bowl over a pot of boiling water. This will melt in less than one minute.
After it is melted, remove from heat, and whisk in the maple syrup, cocoa, salt, and any other goodies you desire. I added coconut and raw almonds.
After everything is mixed, either spread out over baking paper and place it in the freezer, or smoosh into adorable chocolate molds, then put into the freezer for about 30 minutes.
Now you can just pop them out of the mold, and devour with glee. If you want them to look pretty, just trim off the edges with a sharp knife.
These are delicious and super lekkerrrrrrrr!
